Greek Salad

I used to think of salads as mainly consisting of lettuce and a few ingredients thrown on top, until I became vegan. It blew my mind how many different types of salads you can make without any lettuce at all. Here is one of my favorite non-lettuce salads.
 

 
Greek Salad with Tofu
Salad:
  • 16 ounces of firm tofu, cubed
  • 1 cup of canned garbanzo beans
  • ½ cup of sliced or chopped black olives
  • ½ cup of parsley sprigs (I just used dried parsley)
  • ½ medium red onion
  • 2 large tomatoes, dices
  • 1 small cucumber
 
Dressing:
  • 1/3 cup of olive oil
  • 2 tablespoons red wine vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon of Dijon mustard
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon white pepper
